Oh. My. Goodness. Ladies (and gents), let me tell you about this absolutely divine Latin dessert that’s been making everyone in my house fight over the last bite – Tres Leches Coconut Bread Pudding! This isn’t your abuela’s regular tres leches; we’re taking it to a whole new level of deliciousness.
Listen, I discovered this recipe during one of my late-night Pinterest scrolling sessions (don’t judge, we’ve all been there), and after tweaking it about a dozen times, I’ve finally perfected this heavenly creation that’ll make your taste buds dance salsa!
Before we dive in, grab your apron and let’s get cooking! 👩🍳
Ingredients:
– 1 loaf of day-old brioche bread (trust me on this one)
– 3 eggs
– 1 can evaporated milk
– 1 can sweetened condensed milk
– 1 cup coconut milk
– 1 cup heavy cream
– 1 teaspoon vanilla extract
– 1/2 cup shredded coconut
– 1/4 teaspoon cinnamon
– Pinch of salt
For the topping:
– Whipped cream
– Toasted coconut flakes
– Fresh berries (because we’re fancy like that)
Y’all, this is where the magic happens! First, cut your brioche into chunks – don’t be too precious about it, rustic is cute! Spread them in a greased 9×13 baking dish.
In a bowl, whisk those eggs like they owe you money. Add all three kinds of milk, cream, vanilla, and that pinch of salt. Pour this mixture over your bread chunks, making sure every piece gets some love. Sprinkle with cinnamon and shredded coconut.
Now, here’s the hard part – you’ve got to wait! Let it soak for at least 30 minutes (I know, I know, patience isn’t my strong suit either).
Speaking of waiting, while you’re here, make sure to follow me on Newsbreak for more mouthwatering recipes like this one! I share new recipes daily, and trust me, you don’t want to miss what’s cooking in my kitchen! 😉
Bake at 350°F for about 45-50 minutes until it’s golden brown and slightly jiggly in the middle. Let it cool for about 15 minutes (more waiting, ugh!).
Top with whipped cream, toasted coconut, and berries. Serve it warm or cold – honestly, it’s fantastic either way!
The result? A creamy, dreamy, coconutty paradise that’ll have your family begging for seconds. Mine literally licks the plate clean (no judgment in this house!).
