Oh. My. Goodness. Ladies (and gentlemen), prepare yourselves for what I’m about to share because this dessert recipe literally had my neighbors begging for seconds! I’ve been perfecting this Caramel Apple Cheesecake Bars recipe for weeks, and let me tell you – it’s absolutely worth every single calorie.
You know those moments when you need something sweet but want to feel fancy? This is IT! These bars combine the comfort of grandma’s apple pie with the elegance of New York cheesecake, all while being totally Instagram-worthy (trust me, I’ve gotten so many DMs asking for this recipe!).
Before we dive in, if you’re loving these kinds of recipes, make sure to follow me on Newsbreak for daily doses of deliciousness! I share everything from quick weeknight treats to fancy weekend showstoppers.
Here’s what you’ll need:
For the crust:
– 1½ cups graham cracker crumbs
– ½ cup melted butter
– ¼ cup brown sugar
(Pro tip: Add a pinch of cinnamon if you’re feeling extra!)
For the filling:
– 2 (8 oz) packages cream cheese, softened
– ½ cup sugar
– 2 eggs
– 1 tsp vanilla extract
– 2 Granny Smith apples, peeled and finely diced
– 2 tbsp caramel sauce (plus extra for drizzling)
Let’s get baking (and try not to eat all the ingredients along the way – I’m totally guilty of this! 🙈):
1. Preheat your oven to 350°F (because a hot oven is like a good man – essential for success!)
1. Mix those graham cracker crumbs with melted butter and brown sugar. Press into a 9×13 baking pan. Pop it in the oven for 8 minutes.
1. While that’s baking, beat your cream cheese until it’s smoother than your favorite silk blouse. Add sugar, eggs, and vanilla. Mix until combined.
1. Fold in those diced apples – and yes, they MUST be Granny Smith. Trust me on this one, girlfriends!
1. Pour this heavenly mixture over your crust, drizzle with caramel sauce, and swirl it with a knife (make it pretty – we eat with our eyes first!).
1. Bake for 30-35 minutes or until the center is almost set.
Y’all, the hardest part? Waiting for it to cool! But patience is a virtue, and these bars need to chill for at least 3 hours (I know, I know… but good things come to those who wait!).
