Oh. My. Goodness. Ladies and gentlemen, grab your spatulas because I’m about to share the breakfast sandwich recipe that made my husband propose to me! (Okay, maybe not really, but it’s THAT good! 😉)
Let me introduce you to my Maple Bacon Brioche French Toast Sandwich. Trust me, your taste buds will thank you, and your Instagram followers will be begging for the recipe.
First things first, let’s gather our ingredients (while trying not to snack on everything):
– 4 thick slices of brioche bread
– 4 slices of crispy bacon
– 2 eggs (for the sandwich)
– 2 eggs + 1/3 cup milk (for French toast batter)
– 2 slices of cheddar cheese
– Real maple syrup
– Butter
– Pinch of cinnamon
– Vanilla extract
– Salt and pepper
Y’all ready? Let’s get cooking!
1. Start by cooking your bacon until it’s crispy (I like mine extra crispy – fight me! 💁♀️). Set aside on paper towels.
1. While the bacon’s doing its thing, whisk together 2 eggs, milk, a splash of vanilla, and cinnamon for your French toast batter. Girl, don’t you dare use imitation vanilla – we’re not playing around here!
(Hey loves! If you’re enjoying this recipe so far, make sure to follow me on Newsbreak for daily recipes that’ll make your family think you secretly attended culinary school! 😘)
1. Dip your brioche slices in the batter and fry them in butter until golden brown. The key is medium heat – patience is a virtue, honey!
1. In the same pan, fry up your eggs. I like mine over-medium, but you do you, boo!
1. Now for the assembly (my favorite part!):
– Place one French toast slice down
– Add cheese
– Layer with bacon
– Top with your fried egg
– Drizzle with maple syrup
– Crown it with the second French toast slice

The combination of sweet and savory is absolutely divine, and that runny egg yolk? Heaven! I may or may not have done a little happy dance in my kitchen the first time I made this.
Pro tip: Warm your plates before serving. Nothing worse than cold breakfast, am I right?
This recipe serves two, but honestly, I won’t judge if you eat both portions. We’ve all been there! 🤫
