_Sips coffee and gets cozy_
Oh. My. Goodness. Girls (and guys), let me tell you about the most incredible midnight snack that’ll make your taste buds do a happy dance! As someone who’s notorious for raiding the kitchen at 2 AM, I’ve perfected what I call the “Loaded Cookie Butter Dream Bars.” Trust me, these are absolutely worth breaking your diet for! 😉
Let’s get real – we’ve all been there, scrolling through Netflix, when suddenly that snack craving hits hard. Instead of reaching for boring old chips, why not spend 15 minutes making something that’ll have your roommates “mysteriously” appearing in the kitchen?
Here’s what you’ll need (I know you’ve got most of these in your pantry):
– 1 pack of graham crackers
– 1/2 cup melted butter
– 1 jar of cookie butter (Trader Joe’s Speculoos is my fave!)
– 1 cup semi-sweet chocolate chips
– 1/2 cup marshmallows
– 1/4 cup crushed pretzels
– A pinch of sea salt
Now, let me walk you through this heavenly creation (seriously, it’s so easy even my disaster-prone bestie can’t mess it up):
1. Crush those graham crackers like they’re your ex’s photos 💁♀️ Mix with melted butter
2. Press into a lined 8×8 pan
3. Warm up that cookie butter (30 seconds in the microwave) and spread it over the base
4. Sprinkle chocolate chips and marshmallows
5. Pop in the oven at 350°F for 10 minutes
6. Add crushed pretzels and a pinch of sea salt

The best part? While it’s still warm, the cookie butter gets all gooey, the chocolate turns melty, and the marshmallows get perfectly toasted. It’s like a warm hug for your mouth! Let it cool for about 5 minutes (I know, the waiting is torture), then cut into squares.
Pro tip: If you’re feeling extra naughty, add a scoop of vanilla ice cream on top. I won’t tell if you don’t! 😘

P.S. If your significant other “catches” you making these at midnight, just tell them you’re doing it for science. Works every time! 😉💁♀️
Now excuse me while I go make another batch… for research purposes, obviously! xoxo
