_In my best foodie voice_
Ladies and gentlemen, let me introduce you to a show-stopping dinner that’ll have your family thinking you secretly enrolled in culinary school! This Pan-Seared Ribeye with Garlic Butter Mushrooms and Truffle Mashed Potatoes is what dreams are made of – trust me, I’ve made this for date nights, and let’s just say, it sealed the deal! 😉
Y’all, this isn’t your average steak and potatoes situation. This is the kind of meal that makes you want to light some candles, pour a glass of wine, and pretend you’re dining at that fancy restaurant downtown – except you’re in your comfy pants! (No judgment here!)
Let’s get cooking, shall we?
For the star of the show (serves 2):
– 2 ribeye steaks (1½ inch thick)
– Sea salt and freshly cracked pepper
– 2 tablespoons olive oil
– 4 tablespoons butter
– 4 garlic cloves, crushed
– Fresh thyme sprigs
For those heavenly mushrooms:
– 8 oz baby bella mushrooms, sliced
– 2 tablespoons butter
– 3 garlic cloves, minced
– Fresh thyme
– Salt and pepper to taste
For the to-die-for mashed potatoes:
– 4 large Yukon Gold potatoes
– ½ cup heavy cream
– 4 tablespoons butter
– 2 teaspoons truffle oil
– Salt and pepper to taste
Okay, honeys, here’s how we make magic happen:
1. First things first – get those steaks out of the fridge 30 minutes before cooking. Season generously with salt and pepper. Don’t be shy with the seasoning, we’re not making diet food here!
1. While your steaks are coming to room temp, peel and cube those potatoes, then boil them until fork-tender (about 15-20 minutes).

1. For the steaks, heat that olive oil in a cast-iron skillet until it’s smoking hot. Add your steaks and cook for 4-5 minutes each side for medium-rare. Add butter, garlic, and thyme for the last 2 minutes, basting the steaks with all that goodness. Let them rest for 10 minutes – no cheating!
1. In another pan, sauté those mushrooms in butter until golden brown. Add garlic and thyme, season to taste. These babies should be heavenly!
1. For the mashed potatoes, drain and return to pot. Add warm cream, butter, and mash until smooth. Finish with truffle oil – this is where the magic happens, darlings!
Plate it all up like you’re on Top Chef – steak first, mushrooms cascading over the top, and a generous dollop of those dreamy mashed potatoes. Garnish with fresh thyme if you’re feeling fancy (and why wouldn’t you be?).
Y’all, I can’t even tell you how many marriage proposals I’ve gotten from this recipe alone! 😂 But seriously, this dish is a game-changer, and I’d love to hear how it turned out for you!
