Indulgent layers of caramel, apple, and cheesecake meld together in this heavenly dessert bar, topped with crunchy pecans and warm spices.

Hey there, foodie friends! Today I’m super excited to share one of my absolute favorite afternoon treats that’ll make your taste buds do a happy dance! I’ve been perfecting this Caramel Apple Cheesecake Bar recipe for years, and let me tell you – it’s to die for! 💁‍♀️

Y’all, these bars are what happens when a cheesecake and an apple pie have a beautiful baby. They’re creamy, crunchy, and totally Instagram-worthy (if you can resist devouring them long enough to snap a pic!).

Let’s get baking, shall we?

For the crust:
– 2 cups graham cracker crumbs (about 15 crackers)
– 1/2 cup melted butter
– 1/4 cup brown sugar
(Trust me on the extra brown sugar – it makes ALL the difference!)

For the filling:
– 2 (8 oz) packages cream cheese, softened
– 1/2 cup granulated sugar
– 2 large eggs
– 1 tsp vanilla extract
– 3 Granny Smith apples, peeled and diced
– 1/2 cup caramel sauce
– 1/2 cup chopped pecans

Okay, girlies (and guys!), here’s what you’re gonna do:

1. Preheat that oven to 350°F (because a hot oven is like a good hair day – essential! 😉)

1. Mix those graham cracker crumbs with melted butter and brown sugar until it looks like wet sand. Press it into a 9×13 baking pan. Pop it in the oven for 10 minutes.

1. While that’s happening, beat your cream cheese until it’s smoother than your favorite face cream. Add sugar, eggs, and vanilla. Mix until everything’s playing nice together.

1. Pour that heavenly mixture over your crust. Layer those apple pieces on top like you’re creating edible art.

1. Drizzle with caramel sauce (and maybe sneak a taste – I won’t tell! 🤫)

1. Sprinkle those pecans like you’re making it rain!

1. Bake for 40-45 minutes, or until the center is almost set. It should still have a slight wiggle – like a little dance!

Let it cool completely, then refrigerate for at least 3 hours. I know, I know… waiting is THE WORST. But trust your girl here – it’s worth it!

The end result? Pure bliss in bar form! These babies are perfect for everything from afternoon tea to “I survived Monday” celebrations. They’re fancy enough for company but easy enough for a Tuesday night craving.
