_Sips coffee and gets comfy in writing chair_
Oh. My. Goodness. Ladies (and gentlemen), let me tell you about this absolutely divine Latin midnight snack that has become my go-to comfort food when those late-night cravings hit. I’m talking about Churro-Style Nutella Empanadas! _chef’s kiss_
Trust me, your taste buds will thank you for this indulgent treat that combines the best of both worlds – crispy empanada shells and that heavenly chocolate-hazelnut spread we all secretly eat straight from the jar (don’t even pretend you don’t!).
Here’s what you’ll need:
– 1 package of empanada discs (found in the frozen section)
– 1 jar of Nutella (get the big one, you know you want to)
– 1 cup sugar
– 2 tablespoons ground cinnamon
– Vegetable oil for frying
– Optional: vanilla ice cream (because why not?)
Let’s get cooking, shall we?
1. First, thaw those empanada discs until they’re pliable. Nobody wants a broken disc – it’s like having a bad hair day, just unnecessary drama!
1. Spread about a tablespoon of Nutella in the center of each disc (resist the urge to add more – trust me, I learned this the messy way 😅).
1. Fold the disc in half and seal the edges with a fork. Make it tight, ladies! We don’t want any Nutella escaping during the frying process.

1. Mix the sugar and cinnamon in a shallow dish. Set aside for later – this is going to be our fabulous finishing touch!
1. Heat oil in a deep pan to 350°F (or drop a tiny piece of dough in – if it bubbles, you’re good to go).
1. Fry those babies for about 2-3 minutes per side until golden brown. They should look like they just got back from a Caribbean vacation!
1. While still hot, roll them in the cinnamon-sugar mixture. Work it, girl!
Serve these bad boys warm, maybe with a scoop of vanilla ice cream if you’re feeling extra fancy (and honey, you should always feel fancy!).
The result? A crispy, churro-like exterior giving way to warm, gooey Nutella that’ll have you doing a happy dance in your kitchen at midnight. And yes, calories don’t count after 10 PM – that’s just science! 💁♀️
