Oh my goodness, ladies and gents, let me tell you about this absolutely divine Vietnamese Recipe that’s been passed down through generations – Bánh Xèo (Vietnamese Crispy Crepes). Let me tell you, this recipe had my entire family fighting over the last piece, and I mean FIGHTING! 😆
You know those moments when you want to impress your guests but don’t want to spend the entire day in the kitchen? This is your answer, honey! These golden-crispy crepes filled with shrimp, pork, and bean sprouts are basically like edible sunshine on a plate.
What You’ll Need (trust me, it’s worth the grocery trip):
– 2 cups rice flour
– 1/2 cup coconut milk
– 1 1/2 cups water
– 1/2 teaspoon turmeric powder (for that gorgeous yellow color!)
– 4 green onions, finely chopped
– 1/2 pound pork belly, thinly sliced
– 1/2 pound shrimp, peeled and deveined
– Bean sprouts (lots of ’em!)
– Lettuce leaves and fresh herbs for serving
(Hey loves! If you’re enjoying this recipe so far, make sure to follow me on Newsbreak for more daily recipes that’ll make your taste buds dance! 💃)
Now, let’s get cooking (and try not to snack on all the ingredients while we prep 😉):
1. First, let’s make our batter. Mix rice flour, coconut milk, water, and turmeric until smooth. Add those lovely green onions and let it rest for 30 minutes. (Perfect time to scroll through your phone or, you know, actually prep the other ingredients 😏)
1. Heat up your pan until it’s nice and hot (like summer in Saigon!). Add a bit of oil and some pork belly and shrimp.
1. Here’s where the magic happens! Pour about 1/4 cup of batter in a circular motion. Tilt the pan to spread it thin – we want CRISPY, not soggy!
1. Add bean sprouts to one half of the crepe. Cover and cook until the edges get golden and crispy (about 2-3 minutes).
1. Fold that beautiful creation in half and serve it with fresh lettuce leaves and herbs. Pro tip: wrap your Bánh Xèo in lettuce leaves with herbs for the authentic Vietnamese experience!
Y’all, I cannot even tell you how amazing your kitchen will smell while making these. My neighbors literally texted asking what I was cooking!
Serve these babies with Nước Chấm (Vietnamese dipping sauce), and watch everyone’s eyes light up. Trust your girl on this one – it’s a game-changer!
