Oh my goodness, ladies and gents, do I have the most amazing work snack recipe that’ll make your colleagues jealous! Let me tell you about these heavenly Maple-Pecan Energy Bites that have literally become my lifesaver during those long afternoon slumps at the office.
Listen, we’ve all been there – staring at our computer screens, stomach growling, reaching for those boring vending machine snacks. But honey, those days are over! These no-bake energy bites are not only Instagram-worthy but also packed with protein and natural sweetness that’ll keep you going without that dreaded sugar crash.
What You’ll Need:
• 1 cup old-fashioned oats
• 1/2 cup chopped pecans
• 1/3 cup maple syrup (the real stuff, not that fake business!)
• 1/2 cup almond butter
• 1/4 cup mini dark chocolate chips
• 1 tablespoon chia seeds
• 1 teaspoon vanilla extract
• Pinch of sea salt

1. First, toast those pecans in a dry skillet until fragrant – about 3-4 minutes. Don’t burn them, or I’ll have to come over there and show you how it’s done! Let them cool completely.

1. In another bowl, whisk together the maple syrup, almond butter, and vanilla until smooth. Pour this mixture over your dry ingredients and mix until well combined.
1. Fold in those chocolate chips (and maybe sneak a few – I won’t tell!)
1. Pop the mixture in the fridge for about 20 minutes to firm up.
1. With slightly damp hands (this prevents sticking), roll the mixture into 1-inch balls.
Store these babies in an airtight container in the fridge for up to a week – if they last that long! They’re perfect for grabbing on your way to meetings or when Karen from accounting is driving you nuts with her endless spreadsheet talks.
Pro tip: These are totally customizable! Sometimes I add coconut flakes or swap pecans for walnuts when I’m feeling fancy. You do you, boo!
