Let me introduce you to my heavenly Keto Cream Cheese Stuffed Pepperoni Bites. Trust me, these little bundles of joy are so good, you’ll want to make them every single day. I actually discovered this recipe during one of my desperate moments when I was craving pizza but trying to stay on track with my keto journey.
🧀 What You’ll Need:
– 24 large pepperoni slices
– 8 oz cream cheese, softened
– 1/2 cup shredded mozzarella
– 1 tsp Italian seasoning
– 1/2 tsp garlic powder
– Fresh basil for garnish
– A pinch of red pepper flakes (if you’re feeling spicy like me!)
Y’all, this is seriously the easiest thing you’ll ever make. Like, easier than trying to convince yourself that cauliflower tastes exactly like rice (we all know that’s a lie, right? 😂).
📝 Instructions:
1. First, let your cream cheese come to room temperature. Nobody’s got time to fight with cold cream cheese, honey!
1. Mix that cream cheese with the mozzarella, Italian seasoning, and garlic powder until it’s smooth and dreamy. I may or may not have licked the spoon… don’t judge!
1. Lay out your pepperoni slices on a parchment-lined baking sheet. Pro tip: choose the larger ones – size matters here, ladies!
1. Pop about a teaspoon of your cheese mixture in the center of each pepperoni slice.
1. Bake at 400°F for 10-12 minutes until the cheese gets all melty and slightly golden on top.
1. Garnish with fresh basil and red pepper flakes if you’re feeling fancy (and let’s be real, we’re always feeling fancy!).
