Oh my goodness, girlfriends! Let me tell you about this absolutely divine treat that’s been making everyone in my house go crazy. It’s my Salted Caramel Cookie Butter Cheesecake Bars, and trust me, they’re worth every single calorie! 💁‍♀️


Listen, we all deserve a little indulgence sometimes, and these bars are literally what dreams are made of. I stumbled upon this recipe during one of my stress-baking sessions (you know, when the kids are driving you nuts), and it’s been my go-to ever since.

Here’s what you’ll need:
– 2 packages of crushed Biscoff cookies (because regular graham crackers are so last season)
– 1/2 cup melted butter
– 3 blocks of cream cheese (room temperature, pretty please!)
– 1 cup cookie butter (Trader Joe’s version is my fave!)
– 1 cup sugar
– 3 eggs
– 1 tsp vanilla extract
– 1/2 cup caramel sauce
– Sea salt flakes

Instructions (stay with me, bestie!):
1. Preheat that oven to 325°F (I know, the waiting is the hardest part!)
2. Mix those crushed cookies with melted butter until it looks like wet sand. Press it into a lined 9×13 pan.
3. Beat the cream cheese until it’s super smooth (no lumps allowed in my kitchen!)
4. Add cookie butter and sugar, mixing until combined. Girl, try not to eat the mixture straight from the bowl – I know it’s tempting!
5. Add eggs one at a time, then vanilla. Pour over your crust.
6. Swirl in that caramel sauce like you’re creating a masterpiece.
7. Sprinkle with sea salt because we’re fancy like that! 💅

Bake for 45-50 minutes until slightly jiggly in the middle. Let it cool completely (I know, the torture!) and refrigerate for at least 4 hours.

Y’all, these bars are so good, they’ve literally caused fights over the last piece in my house. My husband tried hiding some in his “secret” snack drawer – as if I didn’t know about that! 🙄
