Today, I’m sharing my absolute favorite Mediterranean-inspired Herb-Crusted Salmon with Roasted Garlic Quinoa and Rainbow Vegetables. Trust me, this dish is not only Instagram-worthy but also packed with nutrients that’ll make your body say “thank you!”

What you’ll need:
– 4 salmon fillets (wild-caught if possible, honey!)
– 2 cups quinoa
– Fresh herbs (rosemary, thyme, parsley)
– 4 garlic bulbs (yes, bulbs – we’re not playing around!)
– Colorful bell peppers, zucchini, and cherry tomatoes
– Olive oil, lemon, salt, and pepper
– A glass of wine (for you, not the recipe 😉)

First things first, preheat that oven to 400°F. While it’s heating up, let’s prep our herb crust. Finely chop those fresh herbs and mix them with some olive oil, minced garlic, and lemon zest. This mixture is about to become your new best friend!
