Oh. My. Goodness. Girls (and guys), let me tell you about this absolutely divine seafood breakfast that’ll make you feel like you’re dining at a fancy coastal resort – but in your PJs! I’ve been perfecting this recipe for weeks, and my husband can’t stop raving about it. Trust me, this Seafood Benedict with Citrus Hollandaise is about to become your new weekend obsession.

Listen, I know what you’re thinking – seafood for breakfast? But honey, once you try this, you’ll wonder why you haven’t been doing this your whole life!

What You’ll Need:
– 4 English muffins, split and toasted
– 8 large eggs (the fresher, the better!)
– 8 oz lump crab meat (splurge on the good stuff, you deserve it)
– 8 large shrimp, peeled and deveined
– 2 tablespoons butter
– Fresh chives for garnish
– Salt and pepper to taste

For the Citrus Hollandaise:
– 3 egg yolks
– 1 tablespoon water
– 1 tablespoon fresh lemon juice
– 1 teaspoon orange zest
– 1/2 cup melted butter
– Pinch of cayenne (if you’re feeling spicy like me!)

Now, let’s get cooking!

Instructions:
1. First, let’s tackle that hollandaise (don’t be scared, I’ll hold your hand through this). In a double boiler, whisk egg yolks, water, and lemon juice until slightly thickened. Slowly drizzle in melted butter while whisking constantly. Add orange zest, season with salt and cayenne. Keep warm.

1. Season those gorgeous shrimp with salt and pepper. In a skillet, melt butter and cook shrimp until pink and perfectly curled (about 2 minutes per side). Set aside and keep warm.

1. Now for the poached eggs (my secret weapon is a splash of vinegar in the water). Bring water to a gentle simmer, create a whirlpool with a spoon, and carefully drop in your eggs. Cook for 3 minutes for that perfect runny yolk.

1. Assembly time! Layer your toasted English muffins with warmed crab meat, top with a shrimp, carefully place your poached egg, and generously drizzle with that heavenly citrus hollandaise. Sprinkle with chives and a crack of fresh pepper.

When you cut into that egg and watch the yolk cascade down like liquid gold, mixing with the hollandaise and seafood… _chef’s kiss_ It’s literally breakfast heaven on a plate!

Real talk though – this recipe might seem fancy, but it’s totally doable. And between us, it’s perfect for impressing overnight guests or making your significant other think you’re a culinary goddess. 😉
