Oh my goodness, ladies and gents, let me tell you about this absolutely divine Caramel Apple Cheesecake Bars recipe that’s been driving my family absolutely crazy! Every time I make these, they disappear faster than my motivation to go to the gym (which is pretty darn fast, let’s be honest 😉).
These heavenly bars combine the classic fall flavors we all adore with a buttery graham cracker crust that’ll make your knees weak. Trust me, once you try these, you’ll be making them for every gathering – or just for yourself, no judgment here!
What You’ll Need:
For the Crust:
– 2 cups graham cracker crumbs
– 1/2 cup melted butter
– 1/4 cup brown sugar
For the Cheesecake Layer:
– 2 (8 oz) packages cream cheese, softened
– 1/2 cup granulated sugar
– 2 large eggs
– 1 tsp vanilla extract
For the Apple Layer:
– 3 medium apples, peeled and diced
– 2 tbsp butter
– 1/3 cup brown sugar
– 1 tsp cinnamon
– 1/4 tsp nutmeg
For the Caramel Drizzle:
– 1/2 cup caramel sauce (store-bought is fine, honey – we’re not trying to be Martha Stewart here!)
Now, let’s get cooking! First things first, preheat that oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper – trust me, future you will thank me for this tip!
Mix those graham cracker crumbs with melted butter and brown sugar until it looks like wet sand. Press it into your prepared pan (I use the bottom of a measuring cup for this – works like a charm!).

Now, for the cheesecake layer, beat those cream cheese blocks until they’re smooth as silk. Add sugar, eggs, and vanilla, mixing until just combined. Pour this heavenly mixture over your crust.
For the apple layer (my personal favorite part!), sauté those apples in butter until they’re tender but still have a little bite. Add brown sugar and spices, cooking until it’s all caramelized and gorgeous. Spoon this mixture over your cheesecake layer.
Bake for 40-45 minutes, or until the center is almost set. Let it cool completely (I know it’s hard, but patience is a virtue!), then refrigerate for at least 2 hours.
Before serving, drizzle with that caramel sauce like you’re Jackson Pollock creating a masterpiece!
Sweet angels, I cannot even begin to tell you how amazing these taste! The combination of creamy cheesecake, spiced apples, and that buttery crust is simply _chef’s kiss_!
