Ladies and gentlemen, get ready to absolutely wow your dinner guests with this heavenly dessert that’s been my go-to whenever I want to make jaws drop! Let me introduce you to my Caramelized Banana Foster Bread Pudding with Vanilla Bean Cream Sauce. Trust me, it’s as divine as it sounds!
Y’all, this isn’t your grandmother’s regular bread pudding (sorry, Nana!). This is what happens when comfort food gets dressed up for a fancy night out!
Here’s what you’ll need:
– 1 loaf day-old brioche bread, cubed
– 4 ripe bananas
– 4 large eggs
– 2 cups heavy cream
– 1 cup whole milk
– 1 cup brown sugar
– 1/2 cup butter
– 2 tsp vanilla extract
– 1 tsp cinnamon
– 1/4 tsp nutmeg
– Pinch of salt
– Optional: 1/4 cup rum (because why not? 😉)
For the sauce (trust me, don’t skip this):
– 1 cup heavy cream
– 1 vanilla bean, split and scraped
– 1/4 cup sugar
– Pinch of salt
Okay honey, let’s get cooking! First things first – preheat that oven to 350°F. Now, while that’s heating up, let’s get our hands dirty!
Cut your brioche into chunks and spread them on a baking sheet. Pop them in the oven for about 10 minutes until they’re lightly toasted. We want them crispy on the outside but still soft inside – kind of like my personality!

Now, in a large skillet, melt that butter and brown sugar together until it’s bubbling and smelling like heaven. Add your sliced bananas and let them get all caramelized and gorgeous. If you’re feeling fancy (and why wouldn’t you be?), add that rum and let it flambe! Just keep those eyebrows, darling!
In a large bowl, whisk together your eggs, cream, milk, vanilla, cinnamon, nutmeg, and salt. Layer your toasted bread and caramelized bananas in a buttered 9×13 baking dish, then pour that custard mixture all over it. Let it sit for about 30 minutes – perfect time to pour yourself a glass of wine!
Bake for about 45-50 minutes until it’s golden brown and slightly puffy. While it’s baking, make that vanilla bean sauce by simmering cream with the vanilla bean, sugar, and salt until it thickens slightly.
When it comes out of the oven, drizzle that vanilla sauce all over it like it’s liquid gold, honey!
Y’all, I cannot even begin to tell you how amazing your kitchen will smell – it’s like a fancy French bakery met New Orleans!
