As a busy mom who loves turning fresh farmers’ market finds into something spectacular, I stumbled upon this recipe that’s basically a warm hug in a dish.


Let’s get real – there’s nothing quite like the smell of buttery pastry and roasted vegetables filling your kitchen on a cozy afternoon. This recipe is what I like to call my “fancy-not-fussy” creation that’ll make everyone think you spent hours in the kitchen (when you totally didn’t 😉).

What You’ll Need:
– 2 cups of fresh butternut squash, cubed
