Oh my goodness, y’all! Let me tell you about this absolutely life-changing breakfast recipe that’ll make you feel like you’re dining at a fancy farm-to-table restaurant – but in your PJs! This Farmer’s Breakfast Skillet is literally everything you need to start your day right (and maybe impress that special someone, wink wink).
Listen, as someone who can barely function before my morning coffee, I promise this recipe is totally doable and worth every minute. It’s got crispy potatoes, farm-fresh eggs, savory bacon, and all the good stuff that’ll make your taste buds do a happy dance.
What You’ll Need:
• 4 russet potatoes, diced
• 6 strips of bacon (because, duh!)
• 1 bell pepper, chopped
• 1 onion, diced
• 4 farm-fresh eggs
• 1 cup shredded cheddar cheese
• Fresh chives
• Salt and pepper to taste
• 2 tablespoons butter
Y’all, here’s how we make the magic happen:
1. First things first – cut up that bacon into bite-sized pieces and fry it in a large cast-iron skillet until crispy. Remove and set aside, but leave that liquid gold (bacon fat) in the pan!
1. Toss those diced potatoes in the same skillet. Pro tip from yours truly: don’t mess with them too much! Let them get golden and crispy on one side before flipping. Season with salt and pepper. This takes about 10-12 minutes.
