Look, I get it. We’ve all had those afternoons where that burger joint is calling our name, but trust your girl here – this recipe is a game-changer. Not only will it keep you satisfied until dinner, but it’ll also make your skin glow (and who doesn’t want that?).


Here’s what you’ll need (I promise these ingredients aren’t scary):
– 1 cup quinoa
– 2 cups cherry tomatoes, halved
– 1 cucumber, diced
– 1/2 red onion, finely chopped
– 1 avocado, sliced
– 1/2 cup crumbled feta cheese
– Handful of fresh mint leaves
– 2 tablespoons olive oil
