Mouthwatering Ropa Vieja: Classic Cuban comfort food with tender shredded beef, peppers & onions in tomato sauce over steaming rice

_Sips coffee_ Ladies and gentlemen, let me tell you about a Latin dish that’ll have your taste buds doing the salsa! Today, I’m sharing my absolute favorite recipe for Ropa Vieja – a Cuban-style braised beef that’s literally making my mouth water as I type this.

Trust me, hunny, this isn’t your basic weeknight dinner. This is the kind of dish that’ll have your family fighting over leftovers (if there are any!) and your neighbors “coincidentally” dropping by when they smell what’s cooking. 😉

What you’ll need (because we’re fancy like that):
– 2 lbs flank steak
– 2 bell peppers (I use red and green for that pop of color!)
– 1 large onion
– 4 cloves of garlic (or more, I won’t judge)
– 2 cups crushed tomatoes
– 1/2 cup white wine
– A handful of fresh cilantro
– Cumin, oregano, bay leaves
– Salt and pepper to taste
– Your favorite dancing playlist (essential!)

Okay queens, here’s how we make magic happen:

1. First, season that beautiful piece of meat like it’s going to prom. Salt, pepper, cumin – don’t be shy!

1. In your largest pot (you know, the one you got from your abuela), sear the meat until it’s golden brown. This is where the flavor party starts! 💃

1. Remove the meat and in the same pot, sauté those veggies until they’re soft and fragrant. Add garlic last – we don’t want burnt garlic (ew!).

1. Pour in that wine (take a sip for yourself, you deserve it), add the tomatoes and spices, then nestle the meat back in.

1. Let it simmer for about 2.5 hours. Yes, it takes time, but good things come to those who wait! Use this time to catch up on your favorite show or scroll through more of my recipes on Newsbreak! 😘

_Quick pause_ Speaking of recipes, if you’re loving this vibe and want more delicious Latin dishes that’ll make you the star of any dinner party, make sure to follow me on Newsbreak! I share new recipes daily that’ll have you cooking like a pro in no time.

1. Once the meat is tender enough to shred with two forks (this is literally where “ropa vieja” or “old clothes” comes from), go ahead and shred it up!

1. Let it simmer in the sauce for another 15 minutes until everything is perfectly married together.

Serve this beauty over white rice, with black beans and plantains on the side. If you’re feeling extra, throw some avocado on there too – because why not?

Y’all, I cannot stress enough how this recipe is a total game-changer. It’s the kind of dish that’ll have everyone thinking you spent years at culinary school (when really, you were just following my foolproof instructions 😉).
