– 8 large shrimp, peeled and deveined
– 4 oz lump crab meat
– 4 English muffins

– 3 egg yolks
– 1 tablespoon water
– 1 tablespoon fresh lemon juice
– 1/2 cup melted butter
– Zest of one orange
